Islay Whisky is associated with peaty single malt whiskies due to the peat which fuels the fires to roast the barley resulting in a smokey, earthy and slightly salted flavour. This is true of distilleries such as Ardbeg and Lagavulin. However, other distilleries such as Bowmore, Bruichladdich and Caol Ila still use peat in their process but in a lighter way.
